Daring Bakers June 2014 - Cinnamon rolls challenge

This month the Daring Bakers kept our creativity rolling with cinnamon bun inspired treats. Shelley from C Mom Cook dared us to create our own dough and fill it with any filling we wanted to craft tasty rolled treats, cinnamon not required! So I decided to give a new taste to cinnamon rolls dough by substituting apples and cinnamon with blueberries and cheesecake filling. It was so delicius. Thank you Shelley for this wonderful and delicious challenge!


Dough
  • 100 g butter
  • 60 ml water
  • 240 ml milk
  • 1 large egg
  • 1/2 teaspoon salt
  • 100 g sugar
  • 10 g vanilla sugar
  • 570 g all-purpose flour
  • 7 g dry yeast
In a small saucepan gently melt the butter over low heat. Add the water and milk and allow the butter mixture to cool. Pour the butter mixture into the bread machine's baking pan. Add the remaining ingredients to the baking pan in the order listed above. Prepare the dough using the dough setting - follow your bread machine instructions for dough preparation.


Filling
  • 200 g cream cheese
  • 2 tablespoons sour cream
  • 80 g sugar
  • 10 g vanilla sugar
  • 1 tablespoon all-purpose flour
  • 100 g blueberry jam
Mix together all filling ingredients (except blueberry jam) unitl well combined. Once the dought cycle has completed, remove the dough from the baking pan and place on a lightly floured work surface. Roll out dough to a 40 x 60 cm rectangle. Using a spatula spread cheesecake filling over dough and than place blueberry jam over the cheesecake filling. Starting at the far edge of the dough, roll the dough tightly into a log. Using a sharp knife, trim the ends of the log and cut the log into 4 cm long portions. Divide rolls between two 20 cm square baking tins lined with baking paper, arranging cut side up, spacing 1,5 cm apart. Cover baking tins with plastic wrap and let rise until almost doubled in volume. After rising, rolls should be touching each other and the sides of the pan. Preheat oven to 170°C and bake one tin at a time about 20 - 25 minutes, until the rolls are lightly browned. 

Glaze
  • 125 g confectioners' sugar
  • 2 tablespoons milk
  • 1/2 teaspoon coconut extract
Whisk together the glaze ingredients (adding additional milk to get it to your desired drizzling consistency) and drizzle the glaze over the warm rolls.


Preskočila sam nekoliko posljednjih Daring Bakers izazova. Jednostavno me zadatak nije privlačio, bilo da je riječ o glavnoj namirnici ili postupku izrade. A onda smo dobili zadatak napraviti pužiće s cimetom ili neku svoju verziju nadjeva. To me je potaknulo da konačno isprobam pužiće s borovnicama. Tijesto sam napravila po receptu za pužiće s cimetom i jabukama, a kao inspiracija za nadjev mi je poslužila slatka pletenica i tako su nastali cheesecake pužići s borovnicama i preljevom od kokosa.

Tijesto
  • 100 g maslaca
  • 60 ml vode
  • 240 ml mlijeka
  • 1 veliko jaje
  • 1/2 žličice soli
  • 100 g šećera
  • 10 g vanilija šećera
  • 570 g glatkog brašna
  • 7 g suhog kvasca
U manjoj posudi otopite maslac na laganoj vatri. Dodajte vodu i mlijeko i pustite da se mješavina malo ohladi. Ulijte mješavinu u posudu pekača za kruh. Dodajte ostale sastojke onim redoslijedom kako su napisani. Uključite pekač za kruh na program za dizanje tijesta, prema uputama proizvođača. Tijesto se možete, ukoliko nemate pekač, zamijesiti i ručno na klasičan način. 


Nadjev
  • 200 g krem sira
  • 2 žlice kiselog vrhnja
  • 80 g šećera
  • 10 g vanilija šećera
  • 1 žlica glatkog brašna
  • 100 g džema od borovnica
Pomiješajte sve sastojke za nadjev, osim džema. Dignuto tijesto razvaljajte na pobrašnjenoj površini na dimenzije 40 x 60 cm. Premažite nadjev po tijestu, a zatim rasporedite džem na cheesecake nadjev. Tijesto pažljivo zamotajte u roladu kojoj odrežite rubove ako su nepravilni. Režite pužiće debljine 4 cm i rasporedite ih u dva lima obložena papirom za pečenje. Razmak između pužića neka bude otprilike 1,5 cm. Lim za pečenje pokrijte prijanjajućom folijom i pustite da se pužići dižu otprilike sat vremena. Za to će se vrijemem pužići udvostručiti i dodirivati. Odstranite prijanjajuću foliju pa pecite pužiće otprilike 20 - 25 minuta u pećnici zagrijanoj na 170°C. Izvadite pečene pužiće i pustite ih da se ohlade na rešetki. 

Preljev
  • 125 g šećera u prahu
  • 2 žlice mlijeka
  • 1/2 žilčice ekstrakta kokosa
Pomiješajte sve sastojke za preljev i po potrebi dodajte još malo mlijeka dok ne dobijete preljev željene gustoće. Tople pužiće poprskajte (ili obilno prelijte) preljevom. Umjesto ekstrakta kokosa možete koristiti ekstrakt vanilije.
